Composition: 100% Estate Grown Pinot Noir

We harvested on Thursday August 13, 2020 at 19.5 brix. The 2020 Pét Nat made of 100% Estate Grown Pinot Noir:
- 3 rows (½ ton) of Pommard Clone from Block Six + 9 rows (½ ton) of Dijon 114 + 115 from Block One.
Upon delivery to the winery, the fruit was foot treaded to extract colors and flavors. The fruit had 8 hours on skin and stems before being pressed, and pumped into a stainless-steel tank to begin a 13-day fermentation. On August 26th, 2020 while the wine was actively fermenting, we bottled and crown capped. Over the next 7 months, the wine rests in bottle, neck down, to finish fermentation and separate from the sediment (lees).
On March 19, 2021, we disgorged the Pét Nat, removing the sediment from the bottle, and then added Elise’s “secret sauce” (inspired by old world champagne dosage recipes) before recapping. The wine rested in bottle for an additional month before being labeled and released.

HOW IS PÉT NAT DIFFERENT FROM CHAMPAGNE?
Champagne starts with finished wine, to which a measured amount of sugar and yeast is added, forcing the wine into a secondary fermentation.
When you open a Pét Nat, on the other hand, you’re drinking something unforced, with about half the pressure of Champagne (it's lightly sparkling, think of sparkling mineral water). Pét Nat is carbonated naturally in the primary fermentation process, and never goes through a secondary fermentation process. The grapes go from vine to bottle very quickly, which means most of the wine work happens naturally in the bottle. Pét Nat winemakers have to trust their fruit and their process, because there is little opportunity for intervention.
This is an unfiltered, unsulfured natural wine. A hazy appearance is part of the magic.
WHAT'S THE BEST WAY TO ENJOY THIS WINE?
Its refreshing and spontaneous style is just the thing for summer. Pét Nats are intended to drink young; enjoy now while the wine is young and vibrant.
Before consumption, chill the bottle overnight in the fridge or upright in an ice bucket for at least 30 minutes. The cold will keep the sediment at the bottom of the bottle; a useful tip for drinkers of any naturally hazy wine!
WHAT'S THE STORY BEHIND THE LABEL?
Growing up Elise has always known her Dad to do two things at the ranch: Grow grapes and collect/restore antique pinball and slot machines. Pinball art is colorful and energetic, two qualities she sees in her Pét Nat project. Elise made the decision to use pinball art for the Pét Nat labels and each vintage of Pét Nat pays homage to a piece of pinball art. 2020's artwork, from the pinball game “Time Tunnel” seemed infinitely appropriate for a wine with 2020 energy. Because, 2020 sorta sucked us all into a weird, alternate reality. There is a small nod to the defining object of 2020 on this label…see if you can spot it.
