Winemaker Notes:
Our Estate vineyard is located 380 ft. in elevation along South Napa’s Elkhorn Peak Mountain range. The 25-year-old vineyard has South facing views of the San Pablo Bay and San Francisco Bay. Proximity to the Bay bring early morning fog and breezy, afternoon sun. Heavy influences from the marine environment allow delicate Pinot Noir grapes to flourish, making this small pocket in South Napa is an ideal area to grow world class Pinot Noir grapes.
For our Pét Nat program, two tons of Estate Grown Pinot Noir were harvested on September 12, 2023 at 19 brix. The fruit was brought to the winery, pressed (whole cluster) and pumped into tank. We added a low dose of bentonite clay to the juice and cooled the tank down to 55 degrees. After two days, we racked the juice and then inoculated with champagne yeast.
Temperatures were kept low to promote a slow, prolonged fermentation. Two weeks later we bottled the Pét Nat, while it was still actively fermenting. The fermentation continued in bottle and then the wine aged sur-lie for five months. At the end of February 2024, we disgorged. No dosage.
Food Pairings: This wine is well paired with a wide variety of seafood: raw oysters, white fish, lobster and shrimp. Excellent with chicken, fried or roasted. For lighter fare, try alongside a salad with citrus or summer harvest berries. For cheese, look for creamy styles like Camembert and Humboldt Fog. Delicious with roasted nuts, french fries or kettle potato chips.
About the Label: Each year we create new label art inspired by Ken’s vintage pinball collection. This year’s artwork comes from a machine produced in 1970 called “Double-Up.” Only 55 Double-Up pinball machines were ever made, designed by the legendary Ted Zale. Ted spent most of his career designing pinball machines, and even after retiring, he continued to send his pinball designs to the manufacture. Double-Up was one of Zale’s designs that he created well into his retirement, which goes to show that your next masterpiece knows no age limits...
